Apple Cinnamon Pie

Ingredients
- 6 cups peeled, cored, and sliced apples (such as Granny Smith)
- 3/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 package refrigerated pie crusts (or homemade if preferred)
- 2 tablespoons unsalted butter, cut into small pieces
- 1 egg (for egg wash)
- 1 tablespoon sugar (for sprinkling)
Preparation
1. Preheat your oven to 425°F (220°C).
2. In a large bowl, toss the sliced apples with granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Set aside.
3. Roll out one pie crust and place it in a 9-inch pie dish. Leave any excess hanging over the edge.
4. Pour the apple mixture into the pie crust. Dot the top with small pieces of butter.
5. Roll out the second pie crust and place it over the apples. Trim any excess dough, leaving a slight overhang.
6. Fold the edges of the crusts together and crimp to seal. Cut a few slits on the top crust to allow steam to escape.
7. Beat the egg and brush it over the top crust. Sprinkle with sugar for a golden finish.
8. Place the pie on a baking sheet to catch any drips. Bake in the preheated oven for 45-50 minutes, or until the crust is golden and the filling is bubbly.
9. Allow the pie to cool for at least 2 hours before serving. Serve slices with a scoop of vanilla ice cream if desired.
