Lebanese Houmous

Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/3 cup tahini
- 1/4 cup extra virgin olive oil, plus extra for drizzling
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Juice of 1 lemon
- Salt to taste
- 2-3 tablespoons water (as needed for desired consistency)
- Paprika and chopped fresh parsley for garnish
Preparation
1. If using canned chickpeas, drain and rinse them under cold water.
2. In a food processor, combine chickpeas, tahini, olive oil, minced garlic, ground cumin, lemon juice, and a pinch of salt. Blend until smooth.
3. If the mixture is too thick, add water (1 tablespoon at a time) until you reach your desired consistency. Blend again to incorporate.
4. Taste the houmous and adjust the salt or lemon juice to your liking.
5. Transfer the houmous to a serving dish. Create a well in the centre and drizzle with extra virgin olive oil. Sprinkle with paprika and chopped fresh parsley for garnish.
6. Serve with pita bread, vegetables, or as a dip for your favourite snacks.
