Maple Oat Pancakes

Ingredients

- 1 cup old-fashioned oats
- 1 cup all-purpose flour
- 2 tablespoons brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup maple syrup
- 2 tablespoons melted butter
- 1 large egg
- 1 teaspoon vanilla extract

Preparation

1. In a blender or food processor, pulse the oats until they resemble coarse flour.

2. In a large mixing bowl, combine the oat flour, all-purpose flour, brown sugar, baking powder, and salt.

3. In another bowl, whisk together the milk, maple syrup, melted butter, egg, and vanilla extract.

4. Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix; a few lumps are okay.

5. Preheat a griddle or non-stick skillet over medium heat. Lightly grease with butter or cooking spray.

6. Pour 1/4 cup portions of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.

7. Stack the pancakes on a plate and drizzle with additional maple syrup if desired. You can also top with fresh berries, sliced bananas, or chopped nuts.
